Cauliflower Crust Pizza with Mozzarella and Pepperoni

Ingredients
2 spray(s) cooking spray
1/2 head(s), large uncooked cauliflower, cut into florets (about 2 c)
1 1/2 cup(s) shredded part-skim mozzarella cheese, divided
2/3 cup(s) all-purpose flour
2 large egg(s)
1 tsp fresh oregano, minced
1/2 tsp kosher salt
1/2 tsp granulated garlic
1/8 tsp black pepper, freshly grated
1 cup(s) canned tomato sauce
1 1/2 oz turkey pepperoni, thinly sliced
1/2 tsp Italian seasoning, or other dried herbs
1/2 Tbsp basil, for garnish







































Instructions

Preheat oven to 450°F. Line a large rimmed baking sheet with parchment paper; coat with cooking spray.

Place cauliflower florets in a food processor; process to consistency of rice and spoon into a large bowl. Add 1/2 c cheese, flour, eggs, oregano, salt, garlic and pepper; stir to combine. Spoon crust mixture into two 8-inch circles on prepared pan; smooth with a spoon to form an even layer (mold into a heart shape with your hands, if desired). Bake until medium brown on bottom, about 20 minutes; carefully flip over. Bake until evenly browned, 10 minutes more.
Spoon 1/2 c sauce over each crust and sprinkle each with remaining 1/2 c cheese; top each with half of pepperoni. Sprinkle with seasoning and bake until heated through and cheese is melted (broil to brown cheese, if desired, about 5 minutes); garnish with fresh basil. Cut each pizza into 4 slices.

Ingredients:

1/2 cup all-purpose flour, plus 2 Tbsp
1/2 cup old fashioned oats (not instant)
1/4 cup packed brown sugar
1/2 teaspoon ground ginger
1/4 teaspoon cinnamon


1 pinch salt
3 tablespoons light stick butter, diced
1 teaspoon water
1/4 cup granulated sugar
1/4 teaspoon ground nutmeg
1 pinch ground cloves
3 lbs jonathan apples, peeled and thinly sliced
1 teaspoon vanilla extract


















Directions:

1. Preheat the oven to 375°F Spray a shallow 1-1/2 quart baking dish with nonstick spray.
2. To make the topping, combine the 1/2 cup flour, the oats, brown sugar, ginger, cinnamon, and salt in a medium bowl. With a pastry blender or 2 knives used scissor-fashion, cut in the butter until the mixture resembles coarse crumbs. Add the water and firmly press mixture to form clumps.
3. To make the filling, mix the granulated sugar, the 2 tablespoons flour, the nutmeg, and cloves in a large bowl. Add the apples and vanilla; mix well. Transfer to the baking dish. Sprinkle the topping over the filling. Bake until the filling is bubbling and the topping is golden, 55 - 60 minutes. Serve warm or at room temperature.

4 lean cube steaks
1/2 cup fat-free buttermilk


1 cup flour (reserve 1 Tablespoon)
1 teaspoon salt
1 teaspoon McCormick's Montreal steak seasoning
2 tablespoons oil
2 cups skim milk

Directions:

1. Dip steaks in buttermilk. Combine flour, salt, and steak seasoning (remember to keep 1
tablespoon set aside). Dip steaks in flour mixture.
2. Set steaks on wax paper, let set for 20 minutes.





















3. Heat 1 tablespoons oil in skillet, add steaks, cook until both sides are golden brown.
Remove from pan and keep warm.

4. Combine milk and reserved TBSP of flour in bowl until well mixed.

5. Stirring constantly, add milk mixture to skillet. Once added, bring mixture to a boil.
6. Lower heat and simmer until gravy thickens.
7. Serve over steaks.

Creamy Chicken Pasta with Sun-Dried Tomatoes and Spinach

Ingredients

For chicken pasta:
1 lb chicken breasts, sliced into strips
4 garlic cloves, minced
1/2 cup sun-dried tomatoes (I used unsulfured kind)
1/2 tsp paprika
8 oz penne pasta
1 cup spinach
1/4 teaspoon crushed red pepper flakes (at least, add more to taste)
Salt and pepper to taste (for chicken)
Sauce:
1/2 cup milk
1 cup heavy cream
1 cup mozzarella cheese, shredded
1 tsp salt
1/2 cup reserved cooked pasta water (if runnier sauce is desired)

















































Instructions

In a large skillet, add olive oil and heat it over medium high heat. When the pan is hot, add sun-dried tomatoes with garlic and sauté for 2 minutes. Remove tomatoes from the pan.
Add sliced chicken breast, season it with salt and pepper to taste, and cook for about 4 minutes on each side until browned. Remove the chicken onto a plate.
To make the sauce, add milk, heavy cream, salt and mozzarella cheese and allow them to blend for 2-3 minutes.
Add spinach to the mixture and allow it to wilt. Add the chicken and sun-dried tomatoes back into the pan and mix everything well.
Cook pasta according to package instructions and reserve some cooked pasta water. Drain pasta and add it to the skillet with the sauce and chicken. Mix everything well.

1 pound asparagus (ends trimmed)
salt and pepper
3 tablespoons olive oil, or more
6 garlic cloves, minced
1 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped

Instructions

Preheat oven to 400 F. Line baking sheet with parchment paper (make sure the parchment paper packaging says that it's safe to use at 400 F).
Pat dry salmon. Brush with 2 tablespoons of olive oil from all sides. Season with salt and pepper. Place the salmon, skin side down, on a parchment paper lined baking sheet. Coat asparagus with olive oil, season with salt and pepper, and place around salmon on a baking sheet.
Spread minced garlic on top of the salmon and the asparagus. Top with grated Parmesan cheese.
Bake at 400 F for 15-20 minutes.
Remove from the oven, top with chopped fresh parsley before serving.
