Easy, Low Carb, SUPER tasty chips! Just 2 ingredients.




You certainly wouldn’t guess that these tasty little chips were low carb because they’re SO satisfying! If you like crispy cheese, you’re going to love these. And, yes, they’re made with just 2 simple ingredients! In fact, you probably already have both of them on hand. This is my favorite low carb snack recipe because it actually has a crunch! I might even go as far to say that they’re better than potato chips. Maybe it’s because they don’t have all of the guilt. :)



INGREDIENTS:
4 egg whites
approximately 1/2 cup shredded cheddar cheese (or cheese of your choice)
seasoning to taste (optional)
INSTRUCTIONS:
Preheat oven to 400 degrees.
Grease a mini muffin pan REALLY well with vegetable or olive oil. You can also use Pam, but personally, I don’t think it works as well.
Separate 4 egg whites and seasoning of choice into a bowl and whisk well. I just add a pinch of garlic salt and black pepper, and sometimes rosemary!
Spoon about 1/2 tablespoon of your egg white mixture into each muffin compartment (just until you have a very thin layer covering the bottom). The muffin pan I use has 24 slots, and I find that 3-4 egg whites fills them perfectly. Keep in mind, the thinner you cover the bottom, the crispier your chips will be. If you make it too thick, your chips will only be crispy on the rim, but still really tasty!
Top each one with a pinch of shredded cheddar cheese. When I’m done, I use a small spatula to make sure none of the cheese is touching the edges for easier clean up. The cheese tends to stick to the sides a bit. The silicone muffin tins are much easier to clean… I’m ordering one pronto. ;)
Bake for 10-20 minutes or until the edges have browned. Your baking time will depend on how thick your egg mixture is.
Use a small spatula to remove the chips from the pan. Eat immediately and enjoy!

2 Ingredient Peanut Butter Fudge {THM-S, Low Carb, Sugar Free}



Sweet and creamy fudge bursting with peanut butter flavor. With only two ingredients, this recipe will get you out of the kitchen and spending time with your family!



I mentioned in a previous post that fudge was a special Christmas time tradition at our house. Growing up, our neighbor would bring us beautiful little Christmas tins filled with two different kinds of fudge – chocolate and peanut butter. Back then, I would have been hard pressed to say which flavor was my favorite, but now I would definitely say peanut butter!

My 2 Ingredient Fudge has been such a popular post, that I knew I needed to have a peanut butter option as well! I giggle a little bit, because really it may be a stretch to even call this a separate recipe! However, several people have been asking for it, so here it is.

All you need is one batch of my 3 Ingredient Sweetened Condensed Milk and 1/2 cup natural peanut butter. Really! How much easier can it get? (Please note that the 3 Ingredient Sweetened Condensed milk is sugar free and low carb.) I understand that this recipe is 2 ingredient ONLY if you already have the condensed milk already made. But really, you should always have a jar of that in your fridge! That sweetened condensed milk recipe has been life changing for me! (Well, . . . that may be a bit of a stretch, but it is REALLY good!)




























































































This fudge is a little more of a soft set than the chocolate variety, but I think it is much more creamy. I would never be ashamed to take this to a party or give it away as a gift! I put the fudge in the freezer (or on my front porch) to harden initially, but I usually store it in the refrigerator. You don’t even want to know how many pieces I ate while I was photographing this post! I even had a piece or two as a dessert to my breakfast this morning! (Is that what you call balance??)

Ingredients

1 Recipe Homemade Low Carb Sugar Free Sweetened Condensed Milk
1/2 Cup Natural No Sugar Added Peanut Butter

Instructions

Combine warm sweetened condensed milk with peanut butter and stir until all is combined.
Pour into a Silicone Pan or an 8x8 glass pan lined with parchment paper. I used this Silicone Mini Loaf Pan and filled two of the cavities.
Refrigerate or freeze until firm.
Cut into pieces (yields 25-36 pieces, depending on how you cut them) then store leftovers in the refrigerator.

When you can’t eat bread, either because of allergies, diabetes, or you are choosing to be on a low carb diet, this recipe for Low Carb Cauliflower Breadsticks will put a big smile on your face and help you stick to that new year’s resolution!


I have always been pretty addicted to carbs, but I feel so much better when I limit them in my diet. My body responds better to eating a high protein, low carb diet. I have more energy, my head is clearer, I sleep better, I’m so much more productive, the list could go on. I just feel all around great when I limit my carb intake.

Because I feel so much better, I don’t want to slip back into my old habits that make me feel not-so-good, but I sure do miss bread. When I saw a recipe for Cauliflower Squares on Allrecipes, I thought they looked like an interesting addition to my low carb diet. There are a whole host of recipes for Cauliflower Breadsticks on the web, but this one looked easy enough. I made some adjustments to the recipe, because I can’t help myself, but I think it turned out almost as good as cheesy bread.


These low carb breadsticks taste fresh, garlicky, and cheesy just like an amazing garlic bread smothered in a layer of Mozzarella and Parmesan cheese. There is a hint of cauliflower flavor, but it certainly doesn’t overwhelm. The texture is a bit softer than bread, but that didn’t bother me one bit, because all I could think about was the ooey gooey goodness of the garlicky cheese bursting with fresh basil just like my favorite cheesy bread, but it’s low carb!! I am so happy I can enjoy cheesy bread while eating a low carb diet, I don’t even care that it is ‘faux cheesy bread’.

My next adventure in cauliflower bread will be low carb pizza crust! The topping choices are endless, so I’m having a hard time deciding where to start, but I’m excited to enjoy pizza while living a low carb lifestyle. What do you think? Where should I start? What is your favorite pizza topping?

Low Carb Cauliflower Breadsticks with fresh herbs, garlic, and lots of ooey gooey cheese atop a cauliflower crust looks and tastes like cheesy bread.

Serves: 4-6 Servings

INGREDIENTS
1 head cauliflower, riced
1/2 cup shredded Mozzarella Cheese
1/2 cup shaved Parmesan Cheese
1 large egg
1/2 tablespoon freshly minced garlic
1/2 tablespoon freshly chopped basil
1/2 tablespoon freshly chopped Italian flat-leaf parsley
1 teaspoon salt
1/2 teaspoon ground black pepper
3/4 cup shredded Mozzarella Cheese

INSTRUCTIONS
Preheat oven to 425°F and line a baking sheet with parchment paper.
To rice the cauliflower I cored it and broke it into florets. Then I placed it in the bowl of my food processor and pulsed until it was the texture of rice.
In a large bowl, mix the riced cauliflower, 1/2 cup shredded Mozzarella cheese, 1/2 cup Parmesan cheese, 1 egg, 1/2 tablespoon fresh garlic, 1/2 tablespoon fresh basil, 1/2 tablespoon fresh parsley, 1 teaspoon salt, and 1/2 teaspoon black pepper until combined and holds together. Place the mixture onto the parchment lined baking sheet and spread out into a rectangle about 9x7" and 1/4" thick.
Bake in the preheated oven for 10-12 minutes. Remove from oven and top with 3/4 cup shredded Mozzarella cheese and return to oven to continue baking until the cheese is melted and starting to brown. Cool about 10 minutes and cut into 'breadsticks'. Garnish with fresh herbs and Parmesan cheese. Serve with your favorite Red Sauce and enjoy!

Low Carb BLT Wraps




Enjoy the flavors of a BLT sans bun with our lettuce wrap version which encases savory bacon in a refreshing blanket of lettuce and tomatoes. A smear of lemon aioli escalates lettuce wraps to another level. Serve with a hardboiled egg for more calories and protein.



Ingredients

4 slices (40 grams) uncooked center-cut bacon (certified gluten-free if necessary)
1/2 medium (30 grams) lemon
1/4 cup (60 grams) reduced-fat mayonnaise (certified gluten-free if necessary)
4 large basil leaves, finely chopped
4 large Bibb lettuce leaves
2 medium (180 grams) Roma tomatoes, thinly sliced
2 large (50 grams each) hardboiled eggs, peeled and sliced
1/8 teaspoon coarsely ground black pepper




Directions

Cook bacon until desired doneness. Set aside on paper towels so excess fat can drain.

Grate 1/4 teaspoon zest from the lemon into a small bowl. Squeeze about 1 teaspoon lemon juice in bowl. Stir in mayonnaise and basil.

Spread 1 tablespoon mayonnaise mixture on each of 4 lettuce leaves. Top evenly with tomato, egg, and bacon. Sprinkle with pepper. Wrap leaves around filling.

Low Carb Onion Rings




I’ve really been missing onion rings since I went low carb.

Which is weird because it’s not like I ate them a lot before.  I guess, like anything, it’s the knowing I can’t have them that makes me want them more!

I prefer beer battered onion rings, which these are not.  But as a low carb substitute, they did have everything I look for in an onion ring.



Crunchy and savory on the outside – sweet and soft on the inside…

Mission accomplished!

These low carb onion rings are super easy to make.

My only change would be to cut them thicker than I did, as my breading to onion ratio was a little heavier than I would have liked. Next time I’ll cut the onion rings to about 1/2 inch thick.

Some people have commented that the breading didn’t stick to their onion rings. Please note that it’s important that your oil is hot enough to weld it on there almost instantly.



Also, you have to bread the onion rings individually, a couple at a time, not just dump the whole lot into the egg and then right into the breading in one pile.

If you do that you’ll get a lumpy mess and nothing will adhere to the actual onions.

INGREDIENTS
1 large onion
1 egg
2 Tbsp coconut flour
2 Tbsp grated parmesan cheese
⅛ tsp garlic powder
¼ tsp parsley flakes
⅛ tsp cayenne pepper
salt to taste
¼ cup olive oil for frying
INSTRUCTIONS
Heat the oil in a medium saute pan.
Meanwhile, beat the egg in a shallow bowl. Combine the coconut flour, parmesan, garlic powder, parsley flakes, cayenne and salt in a shallow bowl.
Slice up your onion to a thickness of about ½ - ¾ of an inch and break up the rings until you have a big pile. Add all of the onion rings to the beaten egg and mix thoroughly so they are well coated. Soak the onions in the egg for at least a minute, and then in small batches dip in the coating and then into the hot oil.
Fry until golden brown and then turn with a fork or tongs to brown the other side. Remove to a plate lined with paper towels to soak up any excess oil.
Serve with sugar free ketchup or the sauce of your choice. Enjoy!

Low carb, high protein peanut butter chocolate smoothie.




Chocolate Peanut Butter Protein Shake




After a strenuous workout, nothing beats a protein shake but getting it low carb can be tricky. I cannot stand protein powder and water - BLECH - and milk is out. so here is a low carb chocolate peanut butter recipe that has all the taste of a milkshake without the milk and carbs ! I had this today after my weight routine and felt as if somehow I MUST be cheating !!!


Stick with natural peanut butter with no additives and especially no sugar.  If you are really keen, most health food stores now have an area set aside where you can make your own peanut butter.

The addition of cocoa powder really makes a big difference in this recipe.  The darker the better.  I use a strong, rich, dark cocoa powder. Try it, you won't regret it!

So let's get started.

In blender (that can crush ice) blend together all the following until smooth and frothy

WHAT YOU NEED / MAKE IT

- 1 scoop chocolate whey protein powder
- 2 teaspoons dark chocolate unsweetened cocoa powder ( I use Cocoa Barry - Extra Brute)
- 2 tablespoons whipping cream
- 1 heaping tablespoon cream cheese
- 1 heaping tablespoon sugar-free, natural peanut butter
- 1 teaspoon pure vanilla bean extract or vanilla bean paste
- 2 packets sweetener (I use Splenda)
- 1 cup water
- 1/2 cup ice

HIGH PROTEIN, LOW CARB, HEALTHY “BROWNIE” DESSERT




Who doesn’t loooooooove Chocolate! This is so cool! You can have these High Protein, Low Carb, Healthy “Brownie” Dessert Bars  when you’re on your 4-hour body Diet. Yes, that is right! Do treat these the same way you would treat hummus or nuts though. Don’t go crazy with these. I suggest making them on your cheat day and then you could have one here or there throughout the following week, if you absolutely need to have some1thing sweet.

There is no need to forgo your pencil skirt for those sweatpants when you eat these healthy little bundles of joy because these are made with fiber rich black beans, un hun, that’s what I said…Black Beans! I know it sounds kinda gross, but they are not. These are delicious, rich and chocolaty.



Using stevia instead of sugar makes these low carb so you get that natural sweetness. I have to say that  I am 100% real when I say that these are the BEST LOW CARB BROWNIES I’ve ever made. If you are in need of a quick fix…MAKE.THESE. If you seriously don’t have the time, this is your answer.

Let’s say you have an event that you need to bring something…like a pot luck thingy, or even your cheat day on the sofa, bring these. No one will ever know that these are a High Protein, Low Carb, Healthy Brownie. They’ll think that they’re the real thing and then you can surprise them in the end. Just say “Surprise!” These are actually healthy and I just saved your ass! Literally! LOL!

I like to top these with raspberries but it’s not necessary. On your cheat day, you could melt some leftover chocolate chips and frost them. The raspberries make them look pretty when you bring them to a party.

These are insanely “fudgy” in texture, in the way where you might have to stop and ask yourself “Are these actually good for me?” I can say YES and they are all-around super delicious. Go ahead and indulge now.




Ingredients
1 (15.5 ounce) can black beans, rinsed and drained
1/4 cup carob or cocoa powder (unsweetened)
1 1/4 cups dark chocolate chips
2 eggs
1/3 cup coconut oil or melted bu1tter
2 tsp pure vanilla extract
1/4 tsp cinnamon
1/4 tsp salt
1/2 tsp baking powder
1 tsp instant coffee
1-2 tbp stevia
Instructions
Preheat oven to 350 degrees
Either line an 8 by 8 baking dish with parchment paper and leave a little out on 2 sides to make it easy to lift out after they're baked, or Grease baking dish with butter or use non-stick dish.
Mix all ingredients in a food processor until batter consistency.
Pour batter into baking dish and level it out.
Bake 30-35 minutes or until a toothpick comes out clean.
Let cool for 10 minutes then remove by holding edges of parchment paper to lift out.
Let cool for another 10 min. and then slice to squares on a cutting board.
Notes

Store in the refrigerator for 5 days.

High Protein, low carb recipes/GARLIC PARMESAN CHICKEN/




One of my all time favorite aromas in a kitchen is the smell of sauteing garlic.

Pure.bliss. (Note if you do not love garlic, this recipe is not for you)

Seriously, if I run out of garlic, my kitchen closes down. I don’t know how to cook with out. (Okay, I’m a tad bit exaggerating but this Italian girl loves her garlic!)



This recipe is quick and simple….but it feels like you are eating out. It doesn’t take fancy skills or lots of expensive ingredients to make a great dish.

Garlic Parmesan Chicken is good enough to stand alone but is wonderful over pasta. Or, if you are gluten-free, like me, try it over zucchini noodles. This (Amazon link) tool to make ‘zoodles’ has been worth the investment. I use it several times a week.




INGREDIENTS
3 tbsp. butter
6 cloves minced garlic
2 chicken breasts-chopped into bite size pieces
sea salt
¼-1/2 cups parm cheese
2 cups spinach

INSTRUCTIONS
Saute garlic in butter for a minute or two
Add chicken pieces, salt, and cook until no longer pink in the middle.
Make sure to stir chicken to coat with butter and garlic
Add parm cheese and stir until the chicken is coated.
Add spinach and cook until wilted
Serve by itself or over pasta or zoodles

NO-CRUST PIZZA BITES: GLUTEN FREE, LOW CARB




These no-crust bites are so quick and easy… and so yummy. When we order pizza, my toddler just eats the toppings and leaves the crust. One day the idea just popped into my head to try to make crust-less pizza bites. The result was a definite keeper! They are also Gluten free and low-carb, depending on the toppings and sauce you use! Feel free to get creative with them~




I made these ones here in the pictures like a hawaiian pizza, but you could add whatever toppings you like. Some ideas include peppers, onions, mushrooms, spinach, pepperoni, cooked sausage, etc.


It is fun to try out new flavors.





You will need:
Regular muffin tin
Thicker cut Canadian bacon- not the thin stuff (I get mine at Costco)
Shredded Mozzarella cheese
Pizza sauce (or I prefer spaghetti sauce)
Pizza toppings of choice (I used pineapple, well drained)
****please note: you can modify this recipe to use a mini muffin tin if you would like, using only one slice of canadian bacon per cup and only a little of the toppings***
First, lightly grease your muffin tin. Place 3 pieces of your thick cut canadian bacon, slightly separated as shown in the picture below, into each cup of your muffin tin. Press down into cups. They won’t stay in cup form very well, but that’s okay. They will take that shape more when you add the toppings.



Gather your toppings, sauce, and shredded cheese.


Drop 1 Tbls. of sauce into each cup.  



Add toppings. Load up those cups! I like them decently full. 



Top with a generous amount of Mozzarella cheese.  

Bake at 350 degrees uncovered for about 27 minutes or until the top is bubbly and golden brown. Watch them carefully toward the end to avoid overcooking. 




Remove them from the pan using a fork to pop them out. There will be a little bit of juice to discard in the bottom of each cup.


You can eat them with a fork or by hand, but just to warn you they are a bit messy. We still eat them with our hands, but I thought I would warn you anyway :)

I have always been pretty addicted to carbs, but I feel so much better when I limit them in my diet. My body responds better to eating a high protein, low carb diet. I have more energy, my head is clearer, I sleep better, I’m so much more productive, the list could go on. I just feel all around great when I limit my carb intake.


Because I feel so much better, I don’t want to slip back into my old habits that make me feel not-so-good, but I sure do miss bread.


When I saw a recipe for Cauliflower Squares on Allrecipes, I thought they looked like an interesting addition to my low carb diet. There are a whole host of recipes for Cauliflower Breadsticks on the web, but this one looked easy enough. I made some adjustments to the recipe, because I can’t help myself, but I think it turned out almost as good as cheesy bread.

These low carb breadsticks taste fresh, garlicky, and cheesy just like an amazing garlic bread smothered in a layer of Mozzarella and Parmesan cheese. There is a hint of cauliflower flavor, but it certainly doesn’t overwhelm. The texture is a bit softer than bread, but that didn’t bother me one bit, because all I could think about was the ooey gooey goodness of the garlicky cheese bursting with fresh basil just like my favorite cheesy bread, but it’s low carb!! I am so happy I can enjoy cheesy bread while eating a low carb diet, I don’t even care that it is ‘faux cheesy bread’.

My next adventure in cauliflower bread will be low carb pizza crust! The topping choices are endless, so I’m having a hard time deciding where to start, but I’m excited to enjoy pizza while living a low carb lifestyle. What do you think? Where should I start? What is your favorite pizza topping?

Low Carb Cauliflower Breadsticks with fresh herbs, garlic, and lots of ooey gooey cheese atop a cauliflower crust looks and tastes like cheesy bread.

INGREDIENTS

1 head cauliflower, riced
1/2 cup shredded Mozzarella Cheese
1/2 cup shaved Parmesan Cheese
1 large egg
1/2 tablespoon freshly minced garlic
1/2 tablespoon freshly chopped basil
1/2 tablespoon freshly chopped Italian flat-leaf parsley
1 teaspoon salt
1/2 teaspoon ground black pepper
3/4 cup shredded Mozzarella Cheese

INSTRUCTIONS

Preheat oven to 425°F and line a baking sheet with parchment paper.
To rice the cauliflower I cored it and broke it into florets. Then I placed it in the bowl of my food processor and pulsed until it was the texture of rice.
In a large bowl, mix the riced cauliflower, 1/2 cup shredded Mozzarella cheese, 1/2 cup Parmesan cheese, 1 egg, 1/2 tablespoon fresh garlic, 1/2 tablespoon fresh basil, 1/2 tablespoon fresh parsley, 1 teaspoon salt, and 1/2 teaspoon black pepper until combined and holds together. Place the mixture onto the parchment lined baking sheet and spread out into a rectangle about 9x7" and 1/4" thick.
Bake in the preheated oven for 10-12 minutes. Remove from oven and top with 3/4 cup shredded Mozzarella cheese and return to oven to continue baking until the cheese is melted and starting to brown. Cool about 10 minutes and cut into 'breadsticks'. Garnish with fresh herbs and Parmesan cheese. Serve with your favorite Red Sauce and enjoy!
