Secretly Healthy 87 Calorie Brownies!





Have you ever wished you could have a huge, luscious, rich, gooey, chocolatey brownie for under
100 calories? If you just screamed yes and began licking your computer screen then A. Stop, that's disgusting. B. It may be time for you to chill out about the calorie counting, but if that's what floats your boat then cool beans because... C. Today is your lucky day!


Excuse me for being a little repetitive with the zucchini bar thing, but I thought you might want to make these while you've still got all those giant zucchinis sitting in your garden. Because yes,


zucchini is the secret ingredient in these brownies. Not only are they completely void of butter or oil, but they also contain both fruit and veggies and they can even be gluten free. You're welcome. Good day.


    • Secretly Healthy 87 Calorie Brownies
    • Calories calculated for 15 bars (not counting the optional add-ins)

    • 2 cups finely grated zucchini (I firmly packed it in)
    • 1 cup brown sugar
    • 1 1/3 cup applesauce (I used unsweetened)
    • 2 eggs
    • 2 teaspoons vanilla
    • 2/3 cup flour (I used Oat Flourimage: http://ir-na.amazon-adsystem.com/e/ir?t=yammsnosh04-20&l=as2&o=1&a=B003LPKETS
      , but all-purpose flour would be fine)
    • 1 cup cocoa powder
    • 2 teaspoons baking soda
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon salt
    •  
    • Optional add-ins:
    • -About a cup of chocolate chips and/or nuts
    • -Frosting: 1/2 cup chocolate chips, 1/2 cup butterscotch chips, and 1/2 cup peanut butter melted together
    •  
    • Preheat the oven to 350ºF. Grease a 9x13 inch pan. 
    • Mix together the zucchini, sugar, applesauce, eggs, and vanilla.
    • Stir together the remaining ingredients and add to the wet ingredients, stirring until combined. 
    • Stir in the chocolate chips and/or nuts if using. 
    • Bake for about 55 minutes. 
    • Frost with the frosting if desired.

Lemony Blueberry Cheesecake Bars

Crust
1 1/2 cups whole wheat pastry flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons unsalted butter, softened
2 tablespoons canola oil
1/2 cup sugar
1 large egg, lightly beaten
1 teaspoon vanilla extract

Cream Cheese Filling

















12 ounces reduced-fat cream cheese (Neufchâtel)
1/2 cup sugar
1 tablespoon cornstarch
2 large eggs, lightly beaten
4 teaspoon freshly grated lemon zest
1 1/2 teaspoon vanilla extract
3 cups fresh or partially thawed frozen blueberries



How to make it  1 hour, 25 minutes

Preheat the oven to 350°F (180°C). Coat a 9 x 13-inch (23 x 33-centimeter) baking dish with nonstick spray.

To make the crust: Whisk the flour, baking powder, baking soda, and salt in a medium bowl. Beat the butter, oil, and sugar with an electric mixer in a mixing bowl until smooth. Add the egg and vanilla. Beat until smooth. Add the dry
ingredients and mix with a rubber spatula just until the dry ingredients are moistened. Transfer the dough to the prepared baking dish. Use a piece of plastic wrap to press it into an even layer.

Bake the crust, uncovered, until puffed and starting to brown around the edges, about 20 minutes.

To make the cream cheese filling: Blend the cream cheese, sugar, and cornstarch with an electric mixer or in a food processor until smooth and creamy. Add the eggs, lemon zest, and vanilla. Beat or process until smooth. Spread the blueberries over the crust. Pour the cream cheese batter over the blueberries, spreading evenly.

Bake the bars until the filling has set, 35 to 40 minutes. Let cool completely in the pan on a wire rack. Cut into 24 bars with a sharp knife that has been coated with nonstick spray. One serving is 1 bar. The bars will keep, covered, in
the refrigerator for up to 4 days or in the freezer for up to 1 month.

Baked Tilapia with Spicy Tomato-Pineapple Relish




You can make this recipe with tilapia or any other mild white, flaky fish like cod or haddock. I top the fillets with a super-simple pineapple relish that has just three ingredients—and the entire dish is ready to serve in about 20 minutes.

INGREDIENTS:



4 six-ounce tilapia fillets
1/4 teaspoon Kosher salt
1/2 cup crushed pineapple canned in 100% juice, well-drained
1 plum tomato, diced
1 teaspoon chili paste, such as sriracha (or more to taste)

PREPARATION:

Preheat the oven to 375°F. Line a baking sheet with aluminum foil, and coat the foil with oil spray.
Place the tilapia fillets on the prepared baking sheet and season them with the salt.
In a small bowl, combine the pineapple, tomato, and chili paste. Divide the topping evenly among the tilapia fillets.
Bake for 12 to 15 minutes, or until the tilapia flakes easily with a fork.
